Main Purpose of Job

To provide training and supervisor to inmate workers in quality control as well as general production related to food manufacturing.

POSITION DUTIES

  • Supervisor inmate workers in actual performance of the production process and determining raw material needs to prepare for shipping.
  • Set up and breakdown various machines
  • Train/instruct inmates in proper use of production machinery
  • Must be able to porduce quality finished product from raw materials
  • Inspects work in progress and finished goods
  • Responsible for distributing tools to inmate workers and collecting tools at the end of shift.
  • Maintain accurate records and location of all equipment
  • Must demonstrate full knowledge of Hazard analysis and Critical control points (HAACP)
  • Must demostrate full knowledge of sanitation and operational procedures (SOP)
  • Maintains procedures for tool control and toxic or hazardous materials.

MINIMUM QUALIFICATIONS

Education:  Graduation from an accrediated high school or possession of a high school equivalency.

Experience:  One year of experience working in a meat cutting trade at a hotel, restaurant or institution.  The candidate should also have experience in the operation of meat processing equipment (meat saw, meat grinder, meat cubing machines) and in Standard Sanitation and operational procedures.

DESIRED OR PREFERRED QUALIFICATIONS

HAACP certification is a plus.

Knowledge of portion control methods.

Experience identifying cuts of meat including primal, subprimal and retail cuts.

Intermediate knowledge of Microsoft Word and Excel.

SPECIAL REQUIREMENTS

Selected candidate must successfully complete a background investigation.
